1/2 cup cooked quinoa
1 jalapeño diced
1-2 large mushrooms diced
Sprinkle garlic powder and Italian seasoning and nutritional yeast to taste
1/2 cup spinach
Top with avo
Directions: cook quinoa and add seasonings towards the end.
Toss with spinach and mushrooms to soften the veggies
Then add jalapeños and other veggies you want.
Top with avo and dressing of choice or even salsa.
